Serpico’s Pizza & Wine Pairing Residency

Welcome to Long Island’s first Artisanal Pizza Tasting Residency. It is a monthly, chef-guided 8-course pizza and wine pairing night that changes each time. One room. Eight pizzas. Eight wines. A night curated, not rushed. If you love pizza, wine, and trying things you cannot get anywhere else, this is for you.

The Residency

This is not a normal dinner where you pick a pizza and hope for the best. It is a full tasting journey. Each course lands in front of you with a matching wine, and we guide you through why it works.

The menu evolves every month. The dough, the styles, the toppings, and the pairings rotate. So you can come back again and again and still get a fresh night out.

What You Get

You get an 8-course pizza journey, served one course at a time, with a wine pairing for each course. Every wine is chosen to match what is on the plate, so you can taste how the food changes the wine, and how the wine changes the food. We keep it simple and friendly. No wine knowledge needed. Just turn up hungry and curious.

How The Night Works

Pick a date and come to wineUdesign in Hicksville. We seat everyone, pour the first wine, and kick off the first course. From there, we guide the room through all eight pairings, one by one.

This is designed to feel smooth and relaxed. No waiting for menus, no guessing what to order, no rushing. Just a steady flow of courses, with time to talk, sip, and take it all in.

What Changes Each Month

This is a residency, so it evolves. The core stays the same, but the details rotate each event. That means you can come once and have an amazing night, or come back and get a fresh experience every time.


Some months we lean into a theme. Some months we bring in a guest chef for a couple of courses. The menu shifts with the season, the dough styles change, and the wine pairings are rebuilt to match the new line-up.


What never changes is the format. One room. Eight pizza courses. Eight wines. A night that's curated, not rushed.

Guest Chef: Pier Dario Carosi (Dario’s Pizzeria)

Dario Carosi is a classically trained pastry chef from Italy who brings a baker’s precision to pizza. He is obsessed with flour, hydration, and fermentation, and it shows in the texture and lift of his dough.


His range runs from crisp New York-style pies to airy Roman-style slabs, with toppings that are either beautifully simple or quietly inventive. He was recently given an 8.3 rating by Barstool Sports, the highest pizzeria score on Long Island, and he is one of the most exciting pizza makers in the area.
